AvocaDO or AvocaDONT?

 

We say AvocaDO! We are all about eating healthy at A&M (it's a MUST when you are in a bikini all day!) but we still want to enjoy our food at the same time! Avocados are yummy and delicious! There are so many ways to eat them too! You can use them in a smoothie, in a pasta sauce, in Guacamole, on toast with poached eggs or even in ice-cream! It is a magical fruit that is deliciously creamy and satisfying but with so many health benefits too!

Did you know they contain more potassium than bananas? Potassium is an important mineral that most people don’t get enough of, it supports healthy blood pressure levels. Avocado's have also been proven to decrease risk of cancer & Arthritis. It promotes weight loss and boosts heart health too! So all in all, Avocados are pretty great! You should try and incorporate one into your daily diet! Here are some recipes to help you do so:

 

 Avocado Pasta

  • 3 ounces pasta of choice
  • 1/2 avocado, pitted and peeled
  • 1 clove garlic, smashed
  • small handful of cilantro, roughly chopped
  • juice of 1/4 lime (1/2 tablespoon of juice)
  • 1 tablespoon olive oil
  • salt and freshly ground pepper, to taste
  • 1 fried egg, if desired

Cook your pasta according to the package. While the pasta is cooking, add the avocado, garlic, cilantro, lime juice, and olive oil to a blender and blend well. When the pasta is cooked, save 2 tablespoons of pasta water and drain well. Toss the pasta with the avocado sauce, thinning with pasta water if needed. Season with salt and pepper to taste and top with a fried egg and cilantro, if desired. Enjoy!

Guacamole (Asian Style) 

  • 2 ripe avocados, peeled and pitted
  • juice of 1/2 lime, or to taste
  • 1 large shallot, finely diced
  • 1/4 cup thinly sliced green onions
  • 2 tablespoons – 1/4 cup chopped cilantro
  • 2 tablespoons finely chopped mint
  • 1-2 Thai chili peppers, or to taste
  • 1-2 teaspoons fish sauce
  • salt and freshly ground pepper, to taste
  • tortilla chips, to serve

In a bowl, use a fork to roughly mash the avocado with the lime juice. Stir in the shallots, green onions, cilantro, mint, peppers, and fish sauce. Taste and season with salt and pepper, adding more lime juice if needed.Enjoy with plenty of tortilla chips!
